Mozart documentation comes in two parts: the integrated help system and a step-by-step tutorial manual.  The tutorial manual is not included with the evaluation copy (in order to keep the download size as small as possible) but may be downloaded from here in PDF format.

The tutorial manual is designed as a step-by-step introduction to MOZART's most commonly used features.   Start with Lesson 0 and work through it lesson by lesson to become really familiar with MOZART.
